The hay that we use is called “Foin de Crau,” an AOP (protected designation of origin) hay harvested in the Crau plains of southern France, near the Mediterranean. This region has an unusual ecosystem of steppe vegetation on land that was converted into natural grasslands in the 16th century after canals were built to drain the excess water. The hay used for perfumery, harvested in June, is made up mainly of grass. It is cut while flowering, formed in windrows and pressed, then distilled in France to produce an herbaceous absolute with the warm note characteristic of hay.
