Native to southern China, the osmanthus tree is cultivated for its blossoms, whose apricot-like fragrance is used to scent tea. In several provinces, especially Guangxi, local farmers beat the trees in September and October to harvest the thousands of tiny flowers, whose color varies from pale yellow to bright orange. The blossoms are preserved in brine and extracted at local distilleries during the autumn and winter.
