Description

Capsicum annuum is cultivated on a large scale in southern India, in the states of Tamil Nadu and Kerala. After harvesting, the fruits are dried and ground to produce the spice called paprika. The paprika then undergoes an extraction process to obtain an oleoresin used in the food industry as a natural red dye.
