Parsley is cultivated mainly for its leaves, which are used for aromatic and culinary purposes. After harvesting, the fresh leaves are immediately extracted in order to preserve the plant’s freshness and flavor. The lesser-used parts of the plant, the flowers and especially the seeds, contain an essential oil that is slightly different from the oil obtained from the leaves. Large quantities of seeds are available in France due to an old tradition of parsley seed production.
